My shortcut is to mix some sweet Italian sausage with some ground beef. A little ricotta can help with moisture.

Ina Garten has a great meatball recipe!

Rather than fry the meatballs, I broil them, in the oven. Also, you can make the sauce from scratch, or use jarred sauce (in my cookbook, Ina provides a recipe, but also recommends using Rao’s).

These are delicious and versatile and I always get compliments when I make them. I've used beef instead of turkey before.

We have a recipe we use in my family that I just throw together:

1 lb of meat
1 tsp of salt
1 egg beaten
1 garlic clove
About 1/4 cup of finely chopped parsley
1/4 cup fresh grated Parmesan

First: take a piece of sandwich bread and soak it in some milk. Add the rest of the ingredients, mix together and then fry in a little olive oil on the stove until browned and cooked through.

We do this for the most part, but two thirds beef to one third pork.

I’ve made meatballs a number of times but only once were they really good. If you make good meatballs, what’s your recipe?

We don’t like any store bought brand. If it comes down to that, we’d rather not eat them at all.
