I clean as I go — I put the items I used for prep into the dishwasher as I use them, clean the stovetop after I cook, etc. After we eat, I put away the leftovers and put the dishes into the dishwasher. I wipe the counters as I go.

Very similar here. Unload clean dishes and then load and start dishwasher, handwash pots and knives and dry them with a towel, clean counters with Lysol spray. Obviously put away any food that wasn't put away while cooking.
Trash goes out twice a week, recycling once a week or when it's full.
If anything's especially dirty, like the cooktop or the faucet, clean that. As somebody said, leave it the way you want to find it in the morning.

I leave it how I want to find it in the morning.
Usually that means the sink is empty but if I ran the dishwasher after dinner then had a snack later that bowl/plate might be in the sink.
Countertops cleared of clutter and wiped down is my biggest one.

Basically this. I also set out the plates / cups for next day’s breakfast to gain an extra moment of sleep.


Oh and take the trash out.

Truly closing the kitchen happens on holidays at 5PM and involves a bowl of fruit and a gas station run.

OP, the absolute most important thing you do to close your kitchen is making sure the stove and oven are off. Everything else is preference.
