We eat bean and cheese quesadillas like once a week. I smash the beans before adding the cheese.

Some others I like:

Enchilada but use cooked black lentils instead of ground beef

Tuna (canned) with chickpeas, mustard vinagrette, tomatos and fresh herbs

Sautee chickpeas with minced carrot, garlic and curry powder. Add tomatos if you want. Serve with naan.

There’s also some good recipes for creamy pasta sauce made with white beans but my kdks are never enthused about that.

Red beans and rice. NYT cooking has a good recipe.

Lentil sloppy joes can be really good.

Grain bowls with farro, roasted root vegetables, feta, and chickpeas. Lemon vinaigrette dressing.

Chana masala is another family favorite.

I am like you. Fine with legumes as an ingredient, but I don’t love most dishes that are 100% beans. I also apparently like my beans with animal protein

Here are a few things I do like

Pizza beans from Smitten Kitchen

Charro beans with rice

Red beans and rice with sausage

Lentils with bacon or sausage and other vegetables

Crispy roasted chickpeas used as croutons on salad

Red pepper hummus, as a dip for veggies or stirred into brown rice for a base for a grain bowl

Lentil taco meat (either all lentils or 50/50 with ground meat) in tacos or quesadillas or on salad

Minestrone

Soup I make with ham, black eyed peas, and greens

My kids also really like black bean burgers, black bean soup, black beans and rice and a black bean salsa I make with lime juice, mangos, red peppers, and red onion. I just don’t like black beans.

I use regular feta instead of vegan feta, and will sometimes add cooked quinoa to make it feel like a more complete meal.

Also just made a cabbage-bean soup that was delicious:
2 strips bacon, diced (can skip this if you're looking to avoid meat entirely, but it does add flavor)
1 onion, diced
2 cloves garlic minced
1 red bell pepper, diced
1 carrot, diced
1 Tbs tomato paste
1 can butter beans, drained and rinsed
1 can Pinto beans, drained and rinsed
1/2 head of cabbage, chopped into 1" pieces
4 cups chicken broth
1 Tbs fresh thyme leaves
Salt, pepper, and a squirt of hot sauce to taste

Cook the bacon bits in a stockpot. Drain off most of the fat and add the onion, garlic, carrot and bell pepper, saute until translucent. Add the tomato paste and cook, stirring, until it's dark red. Add the beans, thyme, cabbage, and broth. Simmer until the cabbage is soft. Add salt, pepper, and hot sauce to taste.

I keep things simple and usually just saute them in some olive oil with chili flakes and a couple of bay leaves, season with sea salt, and add a splash of vinegar of lemon juice at the very end.

I like beans, but I don't like plowing through a big pile of undifferentiated bean matter. What do you do to make them a meal, rather than an addition or a side? I make excellent baked beans, but as one of several side dishes for a picnic style meal. I do good bean burgers, and everyone really likes a Tuscan bean & kale soup.
