It doesn't say it's 1 or 2. I'm pretty sure that Princeton AO's are smart enough to be able to read the first page or two of a longer piece and have an understanding of the student's writing and the teacher's grading. Sending a longer paper doesn't force the AO to read the whole paper.

It has to be from school. They are looking for insight into how rigorous the grading is, as a tool to help them put their grades in context.

How long is favorite piece? I wouldn’t submit anything over 4 pages. They don’t want to take the time to read lengthy pieces.

My kid only has 5 plus pages. Not expecting to get in but atleast we should try following the guidelines. Not sure what we will do.

It says "one or two pages is sufficient" which we read to mean that any paper of at least 1 page is fine, not that it can only be 1 or 2 pages. My kid's favorite piece is longer, so we are planning to send that.

Obviously, my kid hasn't gotten in, so I could be wrong.
