Kinda. The filling texture may change slightly. The crust will definitely be softer, and less flaky. But yeah, it should hold up alright.

It freezes ok.

My DD absolutely loves Costco pumpkin pie, but there’s no way we can eat the whole thing before it goes bad. Any idea how well PP freezes and thaws? I’m thinking of buying one and splitting into thirds, and thawing it as we go.
