You can not judge weight loss stalling or progressing based on one week and as long as you are in a calorie deficit you will lose weight even while eating carbs. Sure it is easier to over eat carbs but carbs in moderation in within your calorie range are fine. There is no reason to cut carbs from your diet. Better to learn how to eat them in moderation than try to fool yourself into believing you will never eat them again or that you will be ok eating them once you lose the weight.
If you have a dietician ask them for a sample diet or general vegetarian food list they wat you to use as a guide. That is their job.
