I volunteered to bring a side dish to a dinner a couple hours away. The main course is salmon. What's a nice side I can make ahead and bring with me for a few hours in the car? It would be ideal if it didn't need a lot of reheating.

I was thinking of Smitten's mustard roasted potatoes (https://smittenkitchen.com/2008/11/mustard-roasted-potatoes/) but I just made them and they were good but not amazing. Something with couscous maybe? I need to make enough for 15 and whenever I cook in larger quantities the food never comes out as well or appetizingly.
