You can substitute white navy beans (or cannellini) or chick peas for the black beans. I had a great veggie burger with lots of umami at a restaurant. The menu said it with miso, shiitake mushrooms, quinoa, sweet potatoes, sunflower seeds and other things I have forgotten. I am looking for something like that.
Eggs and dairy ingredients are fine.

I often make Indian style burgers which have a spicy potato and vegetable filling, breaded and pan fried. They don’t do well on the grill though.
