Dry roasted edamame and chickpeas
Trail mix (homemade)
Veggies with plant based dips such as hummus, Muhammara
Baked sesame tofu
Samosas
Pakoras

There are lots of other vegan Indian snacks, or easily made vegan, if you’re up for a bit more work. Ministry of curry has some good recipes.


Samosas and pakoras are basically fried dumplings. I don’t think they are the healthiest if you’re adopting the Michale Pollan approach.

Carrot sticks are a plant food, so I’m not sure why you would not eat them.

I eat a lot of mixed nuts. Kale chips. Cucumber salad. Toast with peanut butter and banana.

Edamame - steamed in pods, or dried roasted with a touch of salt. Great source of protein and vitamins!

Veggies with dip -- pico, hummus, or guac

Fruit either whole, or in a smoothie, or with some yogurt (it's "mostly", not "all") or with peanut butter spread on it.

Baked oatmeal with fruit in it.

Chickpeas. I like to roast them to not completely crispy with some pickle seasoning or Tajin.
