Most of the recommendations for Lancaster are for little kids, but I’m trying to see what we would be fun for bigger kids. On my list right now are:
Turkey Hill experience
Pretzel making
Lancaster central market
Lancaster Science Factory
Is there anything else I should add?

Why Lancaster ?
I’m looking for something within a 2-3 hour drive. One person is currently limited by something along the lines of a broken leg.
Consider Richmond and Norfolk instead - VA science museum, VA outdoor living museum, VA Aquarium & Marine Ctr, the Nautilus - All hands-on, a/c, easy to navigate with a broken leg, and applicable to your kids' ages.
