I often buy large quantities of chicken parts, then separate into freezer bags with a marinade in there so it marinate as it thaws out in the fridge. Also it’s ok to do full day marinade, maybe light on the citrus tho

It really doesn't matter.
That's more superstition than effect. Only certain acids/bases change the texture of the meat. Most marinades don't.

Just OCD stuff for play cooking.

I marinade in the am for most things. If it's a Long time, I add a little less garlic. But otherwise it's fine.

I love grilled foods, especially in the summer, and am always looking for new recipes.

But so many recipes call for the meat to marinate for 2-6 to be home in that 2-6 hour before dinner window.

Is there a hack that would let me either put the meat in marinade in the morning and leave it for 10 hours or marinate if in 1/2 an hour.
