This really sounds hormonal to me. She’s ovulating and you really clicking, and then estrogen levels drop, serotonin levels drop, and she is more easily irritated.

Aren’t life and moods cyclical? I don’t know anyone in a steady state until they are much older.

Maybe it’s preceded by a few days where you think you two are really clicking but in fact you are annoying her in some way without realizing it and she finally snaps.
