Ok.

Make an egg casserole.

It IS quick and easy - it's fewer ingredients and far less work than pancakes!

What made pancakes work for me was getting two two burner griddles. We used to have one, and I don’t know why it took me so long to realize I could just get another one and make the pancakes twice as fast.

True! Leftover pizza and leftover spring rolls really are my favorite breakfasts.

A treat? Monkey bread (but it's not quick- has to bake 35ish minutes)

Weekend breakfast, when we make waffles, pancakes or French toast, we keep in a 250 oven as making, and serve all at once

If your kids are old enough, everyone could sit at the kitchen table and take turns making an omelette with fixings of their choosing (like at a hotel). That way no one person is stuck at the stove, and you all can talk during the process .

A strata?

Whole grain cereal or yogurt or cottage cheese with fun topping options (berries, nuts, seeds, coconut, sliced banana), etc

You can freeze tons of pancakes ahead of time, then just warm them up in the oven with warm fruit syrup.

Waffles.
Omelets — usually spinach with smoked salmon on the side.
Oatmeal with yogurt.
Oatmeal with almond butter or peanut butter and a few chocolate chips.
Grilled cheese sandwiches with bacon and fruit.
Breakfast burrito— scrambled eggs with onions and sausage + salsa

I normally make a dutch baby on Saturday mornings but my kids are getting tired of it. We're looking for other easy ideas that we can quickly prep, stick in the oven, and eat together as a family (so, like not pancakes, French toast, waffles that you have to make individually). Any recs?
