Chiming in to say scrambled tofu (I like with a lot of veggies) and tofu salad are great too. I don’t use a recipe anymore, but the post punk kitchen scramble recipe is close. This is similar to how I make the salad https://sarahsvegankitchen.com/recipes/vegan-tofu-egg-salad/.

The Costco packages are bigger than the ones at Aldi so you get more bang for your buck.
I love it!

I like to cube it and bake it until golden and then mix it into things. The baking helps it stay together and absorb more sauce.

I love tofu too. This is my go-to for crispy tofu.

Our favorite ways of using it are pan fried with a simple soy-miso dipping sauce, and in Thai curry with vegetables (using canned coconut milk and maesri curry paste).

My daughter actually enjoys eating it raw these days, which is a new development after a decade of eating tofu!

We also do some Thai curries and just air-fry, though I should try doing that with some dipping sauces.

Another tip - we get a delicious paneer curry from a local Indian place and they always give us so much extra sauce that I just air fry some tofu and get a whole separate extra meal by combining the air fried tofu with the leftover sauce.

If you like it raw, tofu “feta” is a great way to prepare it. Plus the cold soft version (chili/soy sauce on top)

Lately, I’m all about soft tofu (cold or steamed) with a simple soy/chili sauce drizzled over and a bunch of veggies (I usually make into “noodles”). It takes like 5/10 min to prepare but is one of those super simple
And delicious things to make.

That said, extra firm tofu cubed, lightly seasoned, tossed with cornstarch and air fried (crispy tofu) is my ride or die.

It's in the aisles by the cheese but also close to refrigerated ravioli and such.

And not sure what that person is talking about, but the tofu is organic: https://www.costcobusinessdelivery.com/nasoya-organic-extra-firm-tofu%2c-18-oz%2c-4-ct.product.2001138271.html

Though I don't care at all whether it is organic or not...

Costco has dirt-cheap tofu - I think about $6.50 for four packs of tofu. Lately I have been going through a lot of their tofu, by making a simple tofu mix in bulk at the start of the week with Costco tofu + taco seasoning.

Taco seasoning - https://www.instacart.com/products/278895-spice-islands-premium-taco-seasoning-24-5-oz?retailer_id=5&product_id=278895®ion_id=68187152&utm_medium=sem_shopping&utm_source=instacart_google&utm_campaign=ad_demand_shopping_rp_costco_all-us_evergreen&utm_content=accountid-8145171519_campaignid-11614959806_adgroupid-121439801199_device-c&utm_term=targetid-pla-314343330631_locationid-9007540_adtype-pla_productchannel-online_merchantid-178347490_storecode-_productid-278895&gad_source=1&gad_campaignid=11614959806&gbraid=0AAAAADO98hbJhbWidqsOGaQrjS4UPsG0d&gclid=CjwKCAjwi-DBBhA5EiwAXOHsGQGwSOogLa9YzajKG5SOWEhkTxQXygMrLiVbn--aiKgr4Ek2LlvnpRoC0GUQAvD_BwE

I serve this as taco filling, tostada toppings and taco salad bowls.

I also love these lime protein tortilla chips, also available at Costco: https://simplyprotein.com/products/hint-of-lime-simplyprotein®-tortilla-chips?variant=45222018318498&country=US¤cy=USD&utm_medium=product_sync&utm_source=google&utm_content=sag_organic&utm_campaign=sag_organic&https://simplyprotein.com?utm_source=Google&utm_medium=CPC&utm_campaign=US-SP-ALL-ENG-FY2025&utm_content=PMAX&gad_source=1&gad_campaignid=22201337436&gbraid=0AAAAA-zpzGjnivCLvEz-4eR3nT6CTSSQq&gclid=CjwKCAjwi-DBBhA5EiwAXOHsGSn8upGoIJJB0DexYqolpGdsRaftjln-bDpqM5CkyVBI3YWcAIrOcBoCHngQAvD_BwE

Otherwise I just keep us well stocked with lettuce, tomatoes, avocado, onion, salsa, tortillas and tostadas.

I eat this for lunch most days and we do one dinner a week with this. Also plan to try enchiladas soon with the tofu filling.

Just thought I would share!
