A cooking course
A spay day
Maybe even a day party at a restaurant or your home - invite friends and family.
I'd keep do it early in the day so they have the evening/afternoon with their friends.

I’m the OP and my daughter did in fact ask my husband and I to hang out with them for her friends party, but we declined. We’re glad she wants us along, but think it would be a little awkward. So we’re doing a family party separately.

I think it’s odd that so many of you have children who wouldn’t want to celebrate their 21st birthday with you. Everyone I know who has even a decent relationship with their parents invites them out for the bar hopping. Parents usually go home earlier than everyone but they are still there for most of it and everyone is having a great time together. Some of you need to come to terms with the fact your children don’t like you and figure out why. It’s weird to be shut out from a major party like this.

The most important thing is keeping it safe. Maybe arrange for a car/limo service to take them around to various clubs all night and then return them. Is she outdoorsy? Maybe look into a glamping weekend.

I went to Nashville last year and there was a mom there with her son and his girlfriend celebrating the son’s 21st. They were doing the peddle tavern and other things like that. How about a trip?
