Not frozen but I love sheet pan recipes for ease. Wegmans has great frozen potatoes that are cut and sliced (not overly, good for kids.) Throw those, some chicken thighs and broccoli on a cookie sheet. Simple and delicious.

Lots of sheet pan meals can be pre-prepped and then just cooked at mealtime and serve with some kind of starch (rice, bread, etc).

Casserole-adjacent, but I freeze rice, beans, and chili chicken all in one container (but not mixed together). Straight from freezer to oven, then serve with tortillas and toppings.

Bean or turkey burgers. Make the patties, (I use plating rings) freeze flat on parchment. I make turkey burgers with spinach and feta in them; they freeze like a dream and they're a big hit.

Unfortunately it's hard to make a fancier meal that can be frozen and reheated. The more gourmet things really need to be fresh. But these hearty midwestern/ southwestern things are great.

The only foods I really freeze are leftover chili, shredded chicken like tinga or pulled bbq (which are also easy in the crockpot but if you don't have all day you don't have all day), lasagna, and enchiladas. You just have to remember to take it out to defrost in the fridge or do the microwave defrost dance right before cooking.

I freeze chicken pot pies, lasagna, meatballs and taco meat for when family comes to visit.

Meatballs can be made in advance and frozen, and you can do some 'elevated' spins on those - chicken parm meatballs (stuffed with individual bocconcini balls), chicken piccata meatballs, etc.

Sous vide a beef tenderloin in advance (don't even have to freeze it, once sous-vided it's good for ~a week. You can throw it on the grill to reheat/get some grill marks on it shortly before the meal, but it's cooked when it comes out of the sous vide.

My in-laws are visiting for ten days at the end of May. I was thinking this morning that it'd be great to find some recipes that could be partially or wholly prepared in advance and then frozen, to make things less hectic when it actually comes time to cook.

The only recipes that came to mind are 60s frankenfoods involving cans of cream of mushroom. Delicious for sure, but... it'd be nice to add more, erm, elevated recipes to the rotation.

In the comments on some NYT recipe, someone mentioned freezing chicken thighs in marinade, to pull out the night before. Hacks like that are really intriguing, too!

Limitations: MIL won't eat lamb or fish or bell pepper. Husband and kids have zero spice tolerance, otherwise will eat anything.
