We're about to do a Southern California vacation where we start in LA, do Universal and some other LA stuff, do Disneyland (they find it nostalgic and still love it), then go to San Diego for a few days of beach & boogie boarding.
Other things they have loved -
Japan. Loved the food and everything we did there - biking trips, Tokyo, just everyday stuff was amazing for them.
Costa Rica - ziplining, beach, adventure days.
Hawaii - snorkeling, beach, more relaxing.
But even with all those great trips, roller coasters and boogie boarding still win the day for my 3.

We love to hike, walk, bike, do water activities, eat good food in chill settings, nice scenery and relaxing (not overscheduled) trips.
