Make a roast. Enough beef for one for 5 days.

You will get tired of anything though if you prep for a whole week or 5 days at a time.


Good point. Get some gallon freezer bags and start stashing so you have variety.

Any meat. Get some. Cook it.
Chicken thighs have more fat and taste better as a result, but chicken is quite lean overall. Spice it up with bacon next time you do a chicken kick.

Good ol beans will do the trick. I liked to roast chickpeas so they're a little crispy (not quite all the way) and eat them on salads. Edamame is a good source of protein.

For meat you could do a slow cooker version of carnitas and eat it on pretty much anything (tacos, rice, salads).

Pernil (slow roasted pork shoulder)
Beef or lamb meatballs
Mexican-style shredded chicken (chicken thighs, instant pot)

I make what we call "fake ceviche", basically precooked tiny shrimp and some vegetables in a dressing of lime juice.

but if I wanted it to last a few days, or if I wanted to reduce calories I'd sub cucumber for avocado and use precooked shrimp. I also like shallots better than red onion.

Any kind of dal, there are lots of variations
Crispy fried or roasted chickpeas with yogurt sauce and herbs
Pan fried tofu (season/sauce when adding to dish)
A fried egg on anything

If you want meat, yesterday I was in Aldi and saw a bunch of pre-seasoned beef and pork roasts that you could throw in a slow cooker or instant pot and eat for the week.

Salads with chickpeas, avocado and hard-boiled eggs.

Turkey meatloaf
Turkey meatballs
Beef meatballs
Ground turkey/beef
Grilled or baked plank salmon
Canned chicken - make chicken salad
Canned tuna - make tuna salad

If you're open to non-meat - you can make a sh** ton of seitan very easily and add it to almost everything.

I think it's delicious and a great texture (my meat eating husband will not even touch it, though, so...).
