I am a Cutco devotee. Love them. Use them constantly. I send them away for sharpening every 18 months or so. They're pricey, but come with a lifetime guarantee. They've definitely preplaced many of my knives when I've sent them for sharpening.

My knife set is Henckels, and I like them, but my favorite knife is a very small — about 4 inches — chef knife by Wusthof.
I think it’s this one.
We have both German chef's knives (Henckels fwiw) and Japanese petty knives (various) as well as cheap stamped paring knives. We mostly use the petty knives but the German knives get plenty of use too.

German steel if you’re rough on your knives otherwise Japanese steel. Get a Victorinox and some sharpening stones and learn how to maintain a blade.

Not so much "brand" but the steel and origin.
Japanese steel and German steel are both good, especially older ones (Pre-1960s for German, Pre-1990s for Japanese.)

Go to Sur la Table and try them out and talk to someone. Knives are very personal and the best chef's knife (or whatever) will suck if it isn't a good fit, weight and balance for you.
