I think that's just a time of year thing. Have been to CDG multiple times in the summer and they definitely have air conditioning.

Flew KLM inter=Europe and they provided me with an email for the time I needed to arrive for each flight. It must be airport related - one was 2 hours prior another 90 minutes. Self-check the bag, no passport control - both check ins took less time than I had allotted. However I have found in the past that airports like Lisbon have a lot of lines for bag checks and just a ton of people in general so having the extra time was nice for navigating the crowds. I'm also a person that doesn't mind getting there early.

We've flown on Easy Jet several times within Europe, and it was easy. The bag check is self-serve, although there is someone walking around who can help you. 1 hour was fine for us.

If checking a bag - who knows. If not, 1 hr to 90 minutes prior is fine.

Those countries are all in the Schengen Area, so yes those are functionally domestic flights. No passport checks. If not checking a bag, 75 minutes is more than enough time, giving yourself an extra 15 minutes to account for maybe missing a sign in another language or not having PreCheck. Add 15 minutes if checking a bag.

If I am flying from Barcelona to Lisbon and then to Paris and then to Rome and then to Warsaw, do I really need to be at the airport 3 hours early for each flight?

Or is this like flying domestically where you can be at the airport about an hour ahead of time?
