Go to Strasbourg. The weather will be much better and it’s a completely different experience from being in Paris. “Beauty and the Beast” architecture, German-influenced food, fascinating history.
2 hour high speed train ride so you could do it as a long day trip or an overnight.

Replace the biking aspect with a tour of Versaille by foot. If the weather turns nice, you can spend more time walking in the gardens.
We had a lot of rain and cold in Paris. Did not stop us. We walked up the Eiffel Tower stairs in the rain and cold. We had bought some warm gloves and kept on going.
The cafes offer blankets sometimes.

skip the versailles bike tour if it rains and go somewhere else--I prefer chartres to versailles, but you can also take a day trip to Reims, or Fontainebleau (spectacular and not as crowded as versailles); mont st michel, etc.

musee de la chasse et nature and musee des arts et metiers are cool, funky museums
flea markets
perfume making if your kids are into it
if its really cold, take yourself to a hammam (spa day!)

We were in Paris a few years ago for spring break (with tweens) and it basically rained on and off the whole time. Just pack warm clothes and umbrellas and you'll be fine.
We did Versailles in the rain. We didn't spend as long in the gardens as we would have without the rain but it was still fine. As long as it's not a downpour you'll be fine. There is plenty to see inside if you don't want to tour the gardens at all. Athough they are very impressive. We did not bike.

Notre Dame Eternelle - Augmented Reality Show...happens in a theater underneath the plaza in front of Notre Dame (the Parvis) . Don't accidentally buy tickets to the version in the skyscraper district (La Defense).

You have to wear a backpack with the equipment so careful if grandpa has shoulder issues.
The main palace at Versailles has a huge interior. You could still go but skip the gardens and biking. If you can get a bus tour/guided tour, it might help you keep out of the wet and maybe see some of the smaller onsite buildings like the Petit Trianon and Dairy.
We liked the Batobus Seine hop-on/hop-off cruise for sprinkling partly cloudy weather. We had no trouble with overcrowding.
On another rainy day, I spent part of the day at Galeries Lafayette where they have everything from Carhartt to Bonpoint (celeb high-priced kidswear). There is a tasteful souvenir store on the top floor along with some food and coffee kiosks.
You might schedule cooking classes. We loved the bakery tour/hands-on experience in the Marais that we booked through Get Your Guide. We made a totebag worth of bread and small cookies.

We are so excited to be headed to Paris for spring break, but wow is the weather looking dreary! This week was sunny and 60-70, next week rainy with feels like temps into the upper 30s.
We already have lots of rain-friendly activities booked with tickets - Musee D’Dorsay, tour of Opera Garnier, exploring the covered passageways, Picasso Museum, St Chappelle, chocolate and pastry tasting tour, so that much is good. We were planning to spend the day that is currently looking the absolute worst on a bike tour in Versailles. With 3 teens (boy/girl mix), a fit grandpa, rain and cold, that sounds miserable.
Any suggestions for a replacement activity?
