Look to cuisines that naturally have lots of vegetarian dishes - Greek, Indian, Lebanese, etc. Just in Greek cuisine, there is an entire category of dishes called "ladera", which means "with oil", as in olive oil. These are usually some sort of sautéed vegetable, like green beans, eggplant, zucchini, potatoes cooked into a stew with onions and tomatoes. Greeks also eat tons of legumes - white bean soup, lentil soup, baked giant/lima beans, and split pea soup. There is a spring dish of stewed artichokes, potatoes, carrots, spring onions, dill, and fava beans. Greeks often serve these dishes with bread, but you can skip if you are avoiding grains.
