Airbnb experiences. Doing a churro making class and craft class in Mexico which I hope my kid will love!

Same here. I oscillate between scheduled tours and doing our own thing. If I don't have a lot of time in a location and want to see the major sites I will often book a tour or if its a place where transportation, language or logistics are more than I feel like dealing will I will book. Pros: you can learn a lot about the location from a tour guide - aside for the history or the information on a building - hearing their life experience is fascinating. Cons: group tours can be hit or miss depending on how many, and the composition of the group. I've had some real duds that make me swear off of group tours. As with most travel, mileage will vary.

Viator and Context. I've found a lot of good suggestions here on DCUM too.

I was a skeptic, but we've had good experiences with tours. Example - did a tour to Mt Etna which included several activities and pick up at our hotel. We didn't have to drive, figure out what to do, etc. Planning travel is starting to become exhausting so I am happy to to do a couple of prepackaged days on a vacation.

Viator and Trip Advisor. Some of our favorites include going to a local market for supplies with a local chef, and cooking a traditional meal from the country we are in. Has been fun, educational, and delicious!

Step 1 I get a book on the destination. Then I study said book to see what spots interest me the most, then read if book suggests guides or not then research guides on my own as well.
Easier to reach out to a travel agent that specializes in that area.

Get your guide works too. But I do always Google it first.

What are your favorite sources? How do you usually book? I find this the biggest gamble when you're traveling; a tour or activity can be great or fall flat. Any tips or tricks you rely on?
