Disnwyland is a package deal with Disney Sea, and the kids were very interested in that. They've never been to Disney before
The package is good because you can prebook some rides. Just keep in mind that July is very hot in Japan and the lines at Tokyo Disneyland are intense. People complain of crowds in the US parks but they are nothing in comparison. People don’t bat an eye at a 2 hour line and will line up to enter the park at 5AM.

Day 2 Shibuya scramble makes no sense unless your Ikebana class is there also. It's literally just an intersection. Do it on Day 4 with the rest of your Shibuya/Harajuku itinerary.

Where are you seeing that? I only see April tickets on sale (sold out) with May tickets going on sale April 10

Why don't you make a list of things you're interested in, and see how you feel each day. You may not want to wander around the imperial palace gardens on day 2 if it's raining or very hot. I did a walking tour there and enjoyed it, but I could see an 8 year old with little knowledge of horticulture and history being bored.
