Poach them. Hard boil a few eggs. Cook the pasta. Cool everything. Chop the chicken and the eggs into small pieces.
Eventually everything will end up in a bowl as chicken salad. You can add mayo and chopped green peppers. Or vinaigrette, black olives and scallions. Or just add dressing and serve it with lettuce and cucumbers. Or whatever your family likes.
Cook in a skillet until no longer pink. Remove to a plate. Sauté onion, garlic, and butter. Add chicken broth, cream/whole milk, cream cheese, and sundried tomatoes. Add parm and baby spinach. Add chicken back to pan and beat through.
Oh and I forgot another recipe. Also can just slice chicken breasts in half and stuff them with Brie and apples/caramelized onions/cranberry sauce and bake per usual.
Chicken strips, salt and pepper, slice and coat with flour, egg, panko, bake at 425 for 10-15 mins (165 internal temp).
I make a whole batch of these and these can:
1. be eaten by themselves with some veggies on the side
2. can make chicken wraps with them (just buy some tortillas, add cheese, lettuce, mayo, pickled onions, hot sauce, any other toppings your family likes)
3. Pairs well with an Alfredo pasta too or a Mac and cheese
I do a sort of fake chicken parm by coating them with panko, topping them with tomato sauce and mozzarella, and baking for about 20-25 minutes. Serve with pasta and a veg (usually frozen broccoli steamed or boiled). Not too hard and pretty tasty!
I have a couple of chicken breast. Please help me come up with some different ideas on how to cook them for my kids tonight. Either with rice or pasta. I am tired of our go to recipe which is to slice them and cook them with garlic seasoning.
