My mom's recipe:
CARROT CAKE
1 1/2 c. vegetable oil
1 tsp. salt
2 c. sugar
2 tsp. cinnamon
4 eggs
1/2 c. chopped pecans
2 c. flour
3 c. grated carrots
2 tsp. Baking soda
Beat eggs and add sugar and oil. Sift dry ingredients together and add carrots and nuts. Bake 3 layers at 350° for about 35 min.
ICING
3/4 c. butter, softened
2 tsp. vanilla
8 oz . pkg. cream cheese, softened
1 box sifted powdered sugar
Mix with enough milk to make of proper spreading consistency.
