Greek salad style, cuke, olive, tomato, creamy feta. Make a Greek style dressing for the veggies.
The best thing I find is marinading or treating the veggies a little special. Plain cucumber or tomato can be bland, but making sure they have salt and other seasonings really take it up a notch.
