How does the skin fare in the slow cooker? I do the same, but with skinless chicken thighs. It would be easier and more economical to put a whole chicken in!
NP. I roast a whole chicken in the crock pot. I place it breast side down on a bed of sliced onions for 4-5 hours on high then flip over and broil for a couple minutes to crisp the skin.
There will be a lot of juice left in the crock pot. After the chicken is eaten, I put the bones back in the crock pot with 1-2 additional carcasses, some spices (bay leaf, peppercorns, any leftover greens) and ACV for 18 hours to make bone broth.
