I can’t speak for the whole country because it’s huge. But Cancun, puerto morelos, holbox, Guanajuato and San Miguel de Allende were easy for my veg family. Any area in Mexico with any amount of international tourists has 1-2 veg items on the menu at most restaurants (not in the street or the very cheapest restaurants that have only a few menu items hut any place that has a full menu).
