It is a flaky finishing salt. Pretty popular now, but the first time I had it was years ago in California on a salad of just perfect lettuce leaves and vinaigrette.

Just by some really nice baby lettuce. Toss lightly in dressing. Sprinkle some Maldon.

French vinaigrette would be lovely on butter lettuce with some diced green olives, shredded Manchego cheese and toasted panko breadcrumbs

Salad Niçoise

Good quality canned tuna
Hard boiled eggs
Boiled red potatoes
Green beans
Cherry tomatoes
Consider artichoke hearts, olives, and/or capers
Parsley to garnish

Toss lightly, then compose.
