Edinburgh for sure, and a good place to base. Glasgow is less interesting and can be seen in a day.

Is spring break for you in March or April? If March a lot in the Highlands won't be open. In April there will be more European tourists, and also more to do.

We were in Edinburgh in summer. The Edinburgh Hop On Hop Off Bus was pleasant given the nice weather. Our kids enjoyed Edinburgh Castle. We took a one day Rabbie's van tour of the Highlands that they liked. I feel like they were okay with seeing QE2's former yacht - The Britannia - which was docked in the port near Edinburgh. There was a historic townhouse tour on the Royal Mile (above an ice cream shop) that was worth it. My kids do like bagpipe music - catch some if you can. They did not enjoy Holyrood Palace.

WE drove and loved being able to get off the beaten path. And keep in mind - it will be cold at that time.
I actually loved Inverness, don't know why.
WE stayed and BnB the entire time and LOVED it!

Over fall break we (9yo boy) did 4 days with family and 4 days split between Stirling and Edinburgh. You might add Glasgow or Inverness in lieu of family! If you really want to see Scotland, stop at the many smaller castles, farm demonstrations, etc. you’ll need to hire a car and drive. Rural roads are paved but ~one lane and windy, so if that scares you, avoid any road beginning with a B.
Camera Obsura in Edinburgh was my son’s favorite thing. Battle of Bannockburn Experience was second. Arthur’s Seat hike tied. You can save a bundle by becoming an annual member of one of the two orgs that owns/runs castles and going to those - get the app. You will get wet. Have good raincoats and two pairs of shoes for kids, preferably one hiking/waterproof.
