The old part of Valencia is lovely. It is still a big city, took us forever to bike to the beach from old town. We don't care for beach so it was no big deal.

Moraira was nice. Lots of really good restaurants, and you can walk to the beach. It felt safe, FWIW.

I was thinking of going Madrid-Burgos-San Sebastian but now am wondering if we should go east from Madrid instead and head to the Costq Blanca?

It’s very touristy—lots of British retirees. Beautiful area, food was great. Beach was Mediterranean pebbly. I didn’t swim on my trip (winter). I found the people friendly and willing to work with my HS-level Spanish.

How does it compare with San Sebastián? I know San Sebastián is considered a little more foo-foo …. But how do the beaches and water etc compare?

Benidorm is like a mix of Ocean City and Vegas with a British accent. It is a love it or hate it kind of place. Altea, Javea, Moraira are all nice.

The title says Costa Blanca, but the post says Costa Brava. Those are two different areas of Spain.
In Costa Brava, I recommend Cadaques, Roses, and Tossa de Mar on the coast, and Girona inland.
