I don’t have the patience for long ferments required by sourdough so I cheat and add a little dry yeast. Still has good sourdough flavor but rises faster.

I am new to sourdough and just learned never to put discard down your drain. I had not been doing it, but had no idea it would clog so badly.


You can compost it but it's great to use in other discard recipes.

I like the perfectloaf.com pancake recipe for discard. It’s great.

For sourdough, it takes a while to get the hang of shaping. The fold technique is good. If you are used to yeast bread, you may be trying to knead and flour the goop until it becomes thick. That doesn’t really work for sourdough, but stretching and folding and long bulk ferment in the fridge work well. Make sure you are using a scale. Good luck!

How cold is your kitchen?

And I’m not asking what temperature you keep your thermostat at, but the real temperature of your kitchen. If it’s too cold that will affect any proofing and if you’re under proofing, you’ll get bricks.

I follow everything sourdough on the King Arthur flour website. It has helped me keep my starter alive since 2020.

My DS tried to grow the sourdough starter during Covid. All he got was mold! Can you ask your neighbor for some pointers?

It sounds like your ferment is fine. If your bread is turning out to be a brick, you’re not proofing enough. Either you’re not giving it enough time, or you’re not proofing it at a warm enough temperature.

I don't know why I tried baking bread yet again. I got some starter from a neighbor and I'm going to have a vat of it by the time I'm done trying to feed this thing and get it to the right consistency.

I went ahead and separated out some to make bread and think I am basically going to end up with a brick instead of a loaf. I've also used about every spoon, measuring cup, and bowl I have in the house.

I think I liked the Sex in the City era when making reservations was considered a culinary success.
