I honestly found Belize to be one of the easiest trips I have ever planned. First pick an ecolodge and then pick a beach. The ecolodge will give you a list of excursions and you pick the ones you want to do (we also went to Tikal for a day, which I highly recommend). The ecolodges will likely provide transportation from the airport and to the ferry for the beach.
We went to Table Rock for our ecolodge (highly recommend!) and Caye Caulker for the beach. A lot of people pick San Pedro for beach and I am sure it is great too (it is more developed with more upscale lodging if that is your think). Caye Caulker has more of a backpacker vibe and is tiny.
