Ina Garten has a make-ahead gravy that is great. You can make it and store it in the fridge, just reheat and serve on Thursday.

Gravy is easy but I recall the first half dozen times or so I made it were pretty awful, although my first turkey gravy was fine. But also the gravy happens when everything is coming together at once and it gets sort of crazy. You could have some on hand as a backup but give it a shot anyway (plus you can add store bought mix or jar to the real thing)

I found a reviewer who ranked this best out of 10 gravies. This is what I'm buying.

I love the Trader Joe’s gravy. It also happens to be gluten free (made with cornstarch instead of flour), so is inclusive for any guests who need that.

It's super simple to make, just add flour to the grease drippings and maybe some butter for brown gravy. Spice it as you want with pepper and salt, etc. Starch if you don't want flour.

Or buy a cheap brown gravy packet and mix with water and heat it up. Might save you 5 min.
