OP here. I decided to roast delicata squash with the cranberry mixture and chickpeas for the vegan dish (I may add in wild rice and make it like a casserole, tbd) - I found similar dishes online for inspiration.

To the poster who is “worried for me,” these vegans are in my extended family and I cook for them frequently, and usually handle the main this way (a meat and a vegan version of same or similar dish). It works well, everyone is happy and is easier for me since I handle a lot of the prep at the same time for both dishes. But thank you for your concern 🙄.

This is not that dish, OP. You need something like - chicken/veggie biryani, chicken/veggie tacos, meat/veggie pasta, etc etc. Not to be rude, but if this was the starting idea, I’m a little worried for your guests. Be sure to make the sides vegan (eg, no meat in side veggies etc), so it’s not that only the meat eaters can eat those!

I have never made it but ate it at Joon in Tysons and it was delicious.

I’d suggest chickpeas instead of some of the chicken. Braise the mixture on the stove. If your guests are ok with vegetarian (not vegan), you could add cubes of seared halloumi at the very end. At least with the chickpeas & cheese, there would be a decent amount of protein. If you need vegan, then maybe cauliflower in lieu of the halloumi.

I like the field roast "celebration loaf"--it's seitan and much much better than tofurkey. Whole foods usually has it and trader joes has its own version.

Make something people will eat. Otherwise don’t bother. You will not find one dish easily.

I would just a substitute like quorn filet if I personally wanted to make this. I wouldn't necessarily want the host to go to the trouble of making a vegetarian version of what everyone else is having, though, just for the sake of it. I would rather just eat sides.

As a vegetarian I would not try to make a vegetarian version of this dish. Not enough main ingredients. I would just make something different.
