We have a convection cookie oven. For cookies, we set the temperature 25° lower and shorter time. Also, do not preheat. Put the cookie sheet in a cold oven. If it's preheated, then even shorter and/or lower. Also, an oven thermometer is always a must.

I worked in a commercial kitchen, and all the ovens were convection. Lots of cookies and everything else being baked in them.

Get a thermometer in there and see what it says.

Are you using the same cookie sheet for all your batches? If so , the faster bake times are because the sheets are already warm/hot. Check the temp. I thought my electric wolf was hot but it turns out that my prior gas oven was always under temperature

Use Gourmet mode. It asks how many racks you're using. Follow the directions it gives you.

I think my wolf runs hot. I use the suggested recipe temp for cookies but start checking a few mins before the lowest time the recipe suggests (so i check at 7 mins if the recipe says bake for 9-11). I also find subsequent batches cook faster, so by the time I get to the third sheet of cookies, I really have to watch them.

I had a Viking that had separate convection and convection bake.

The convection used both heating elements, but the convection bake used the bottom element combined with the fan.

Also if using convection bake I think the things on the lower rack get more heat.

Sorry it’s been awhile. I moved and have a crap electric oven!

OP here- a professional baker told me to use convection and to put it on 350, but that's clearly way too high, so today I did 325 but it still didn't work. Will try without convection again next time I guess.

Convection equals 50 degrees hotter than the temp set.

get an in-oven thermometer to check the temp.

if you are using convection, you will need lower temp and less time than the recipe calls for.

Convection can be great for cookies, I don't think that's the problem. (Though when I use convection for baked goods I lower the temp by 25 degrees). I would get an oven thermometer to see what's going on.

You absolutely don’t use convection for cookies!!! Convection is essentially what an air fryer is. You need to keep it on bake. Why are you using convection?

Convection is not a good idea for cookies.

Your oven might need calibrated. Read the manual.

We have a new Wolf oven. This is my third time burning cookies. Recipe calls for 350 for 14 minutes. At 7 minutes at 325, the bottoms are burnt, tops are brown, and insides are not cooked. I put it on convection. Any ideas? Not sure what I'm doing wrong.
