Y’all are overcomplicating this.

OP - choose 2-3 sauces, proteins, and pastas. Go to Party City and get the disposable chafing pans. It’s pasta, so you’ll have to have a set time to eat. Even with the chafing dishes, you will not be able to hold it for hours. Add some garlic bread, an easy veggie, and dessert.

Enjoy the party.

Hmm. Just because it's "in" doesn't mean you need to pick the most complex option, OP. My teens would be happy with many choices, not just pasta.
The secret to good hosting is that it's better to do something "boring" but that you're sure of doing well, than doing something fancy that has a higher risk of failure. You can have fun extras and goodies. But the main stuff has to be simple.

Yes this. I'd also undercook the pasta so that when you reheat it's not gummy and overcooked.

I think I'd just make a few varieties of pasta casseroles (like baked ziti) and then if you have some picky eaters, make a little plain pasta on the side for them. Or just have loads of french bread for the picky eaters.

You could borrow several crock pots (with a warm function) I think insta-pots also have a warm function. But as another person said you can buy disposable chafing dishes.

Don't mind spending some money. Have never hosted or attended a pasta bar party. Looking at photos there are a lot that don't show heating elements. However, google has just revealed you can buy disposable chafing dishes fairly cheap. Maybe that is the answer.
