So what are the alternatives? Sourdough has been around for thousands of years, they didn't have parchment paper back in the day...
Pizza stone/steel in the oven and cornmeal for sourdough bread baking, use pizza peel to put it on and take it out.
Some use silicone mats, but I don't think it's better then parchment paper given temperature needed
