If there are no structural changes, I'd say expect to pay about 2X the cost of materials and fixtures (assuming you get a contractor where you are supplying all the material and he's just providing labor). Should take about 5-7 days and cost less than 15K.
I bought a replacement toilet but have yet to buy other fixtures. I’m hoping for some industry advice on the tub/shower combo specifically.
What advice are you wanting or questions do you have?
On a side note, if you had an older toilet, sell it. Many people are wanting retro toilets with higher flush rates and will pay big premiums for them. Your contractor, if you are using one, may have taken it for that already though.

Can't help you there, but why don't you just buy a tub (a good 36" tub should be $1000ish), and tile the walls? Here's an example - https://www.signaturehardware.com/60-in-x-36-in-sitka-acrylic-alcove-soaking-tub---left-drain---white/449021.html.
Hang a shower curtain and you should be good to go. Don't complicate it with a door and such.
