Millionaire bacon or if you don’t want spicy just do brown sugar or maple syrup. Keep warm in foil.
Do a crustless quiche with ham and cheddar in a lasagna pan, cut into squares keep warm.

Go more toward lunch. Sandwiches, potato salad or pulled chicken with BBQ sauce and coleslaw.

Heat up sausages and foil wrap, then in towels, and put in a cooler.
Take a plug in 12V DC adaptable mini microwave, or some exo-thermal bag heaters like used in the military for warming rations to reheat if you want.

Sausages and tacos are always crowd pleasers.

Quicke is good cold.
I think I would arrange to pick up coffee boxes at a Starbucks or Dunkin close to the venue, not bring coffee 3 hours. Hot coffee would be a priority for me! And maybe some liquor to add into it if people want that.

+1. I like to make egg and croissant breakfast sandwiches for tailgates. You can make the scrambled egg mixture ahead of time and then assemble the morning of and wrap in tin foil. I like to put them in the large foil roasting pans with the plastic lids.
