I toss mine with olive oil, salt, thyme, rosemary and red pepper flakes. I place them in a casserole pan then sprinkle pancetta and garlic over them. I pour a cup of white wine in and roast them in the oven at 425* until done. Add additional wine if it evaporates.

Put them in a pan, sprinkle minced garlic and minced onion on them, cook in oven for an hour, along with cut up new potatoes that have EVOO and seasonings (those need to be stirred every 15 minutes), and green beans.
