For a one dish dinner, my family also likes something like the sheet pan chicken thighs that the 14:38 poster mentioned, but I switch up the spice rub and surround them with veggies (broccoli, cauliflower, squash, brussels - whatever your family likes) and potatoes.

We'll broil or grill fish or shrimp, make a simple cream sauce (often just yogurt, lime, garlic or yogurt mixed with chipotle peppers from a can) and top with slaw, avocado, and/or mango, pineapple or normal salsa.
