I make this one a few times a week. I usually leave out the avocado unless I have a ripe one sitting around.

I like to add a glug of Makoto ginger dressing and extra chili crisp.

Cucumber, radish, green onion. Ride vinegar and salt. Toss and wait a little. Its good if everything is sliced thin.

If you're open to sandwiches-- fill a pita pocket with sliced cucumbers, tomatoes, sliced cheddar, sprouts, and mashed avocado. Can also add crumbled bacon. (I get the bags of crumbled bacon from Costco, and use it for everything.)

I always loved the Balkan cucumber salad in the Moosewood Cookbook.

When I'm keeping it simple, I toss sliced cucumbers with tomatoes, chickpeas, feta cheese, and a vinaigrette. The chickpeas provide a protein so the salad can be a meal.

We are having fun trying this trend. My kids are actually eating cucumbers. I am looking for flavor combos and alternative recipes other than salmon cream cheese and tuna fish. I’m open to all ideas/recipes. Thanks!
