I’m a card carrying carnivore but I eat a ton of veggies and nearly always grill them. A lot of fruits too. Bell peppers (any peppers, really), corn on the cob, eggplant, squash, scallions, onion rounds, pineapple, peaches (any stone fruit really), potato rounds, grilled hearts of romaine (then drizzle on Caesar), lemon halves to squeeze, asperagus in a grill basket. It’s a totally different flavor profile and well worth adding that new dimension. As another poster noted, fish is incredible. Cook it on a cedar grilling plank. The list goes on. For what you’re looking for I agree gas is going to be the right place to start. If you get into it, then get a simple Weber kettle for charcoal grilling to add another flavor profile.

I grill a lot of fish, veggies, and make pizza on my grill, so I’d say yes. But if you are happy with the way you cook now, I’m not sure that I would feel compelled to add a grill into my cooking mix.
The main thing I like about the grill is not heating up the kitchen in summer. Also, I there are several dishes where the food just tastes better grilled, even on a gas grill. This wouldn’t apply to you, but my son would never eat a hot dog that wasn’t grilled. “Not even the same food group” is his opinion. I think that sentiment applies to a number of dishes.

I grill veggies all of the time. Any chance you eat fish? That's delicious on the grill.

If you take the leap, get a gas grill. So much easier/faster than messing with charcoal.

When the weather is nice I use the grill for almost anything I could cook in the oven - veggies in a grill basket, corn on the cob directly on the grates, frozen and homemade pizza, sheet pan dinners. I love my grill.

I grill vegetables all the time with a grill wok. It’s a similar but different taste than roasting. You can also do corn on the cob. I have seen people rave about grilling fruit, but have not tried it myself.

I have a really nice space for a grill on my deck in my new house, and I love to cook and am always seeking new ideas and recipes. However, I haven't owned a grill in years. We don't really eat meat, and I feel like the only veggie options that routinely get grilled in my world are kebobs.

I guess I'm mostly asking for inspiration for vegetarian/vegan recipes that involve grilling. Any recommendations?
