What do you all do that necessitates all this protein?!?

If you're exercising intensively, please beware that you're wearing out your joints. You can attain a healthy cardiovascular system without joint wear.

I rely on liquid eggs, cottage cheese, Greek yogurt, fish or a lean meat at every meal.

I often have a savory breakfast of cottage cheese with cajun seasoning or lemon pepper, and chopped tomatoes and cucumbers. That will get you 25 g.

I go to a dietician, and given my activity levels she has recommended 120-140 grams a day.

You are not limited in the amount of food you eat per day. You don't have to "balance". Eating an apple (fiber( doesn't mean you then can't have a hamburger (protein) for example.

nuts
seeds
beans

I’ve heard that you can sprinkle nutritional yeast on your food for extra protein, but I’ve never actually tried it.

If you don’t care for eggs, yogurt or meat it can be very limiting. If you really want to get to 100g/day I think you have to do multiple shakes or add protein powder to things.

No yogurt is tough. No fat plain yogurt is an easy protein rich food. Maybe another protein shake. Whey protein with low sugar - find one with 120-130cals and approx 25 G protein per serving.
