I’d make dips like roasted red pepper dip or blacl bean dip oredamame dip, for the raw cut veggies and there is probably a cracker she can eat- rice cracker? What about protein balls made with sunbutter?

Are Wasa crispbreads low carb enough? I like this variety. It is a diet food that I like to eat.

I put tuna down up above. What about canned shrimp?

I bet with a few slices of egg and some shrimp and a sprig of dill on a Wasa, it might make a sort of Scandinavian snack. Also could consider smoked salmon. How about mini salmon patties or crabcakes with minimal/carb-free binders?

The South Beach Diet used lettuce leaves instead of bread. That's a possibility if you find acceptable fillings.

Thanks. She buys brands of hummus that don’t have lemon juice, and she’s good with a simple ginger-soy sauce marinade. I feel bad for her because there are so many things she can’t eat, so any ideas are very welcome.

I Googled. Most things were disqualified but celery sticks, mini carrots, kale chips, bell pepper type pepper strips, and tuna would work.

I like seasoned roasted zucchini spears. Although that is certainly not a hand snack. If you can eat it cold, it is easy to make ahead with dinner and have leftovers.

Roasted sweet potato? We used to cut into small cubes, drizzle with olive oil and salt, roast until outside is caramelized. Good warm or cold. Kids used to love them.

Hummus contains lemon juice.
If the tofu is marinated, check the marinade ingredients.

I have a friend with serious dietary restrictions stemming from health issues. We’re trying to figure out healthy, low-carb snack options. So far on the list we’ve got hummus, eggs, edamame, cut up raw veggies, marinated tofu, and roasted chickpeas.

No meat, dairy, or fruit. She has allergies to many things found in highly processed foods. Absolutely no citrus, no tomatoes, nothing vinegary like olives or pickles. No nuts, seeds, or dried seaweed. Absolutely not even a speck of chili powder.

Anyone have ideas? Thank you!
