If the issue is low iron then I don't think eating chicken will improve your iron levels. Red meat would be better. Or you can add an iron bar to your cooking such as this one

The organic bell and Evans has the bet texture. It’s also the wegmans house brand. The non organic isn’t the same texture, more similar to the Perdue crap.

This is OP. Thanks for the replies! I honestly can’t remember what the texture of ground meat feels like in my mouth, but I wonder if ground meat would be better, or if there is a way to disguise the meat in something (though I guess I’d still feel it), or a meat with a different/better texture? I remember liking meatloaf as a kid. Maybe a Turkey meatloaf? Although that kind of sounds gross, just typing it out.

There is this whole thing of “woody chicken” now. It could be that. Not sure how you prepared it but it is very helpful to split the chicken through its thickness or cut the raw into bite-sized pieces or shred. It will retain the easy to digest aspect while rendering texture issues less noticeable.

Chicken now isn't the chicken you remember. It's dry and tough if you get tenders or whatever to cook and is just not good texture. It's like fake meat.
You probably don't want to cook a chicken.
Try ground turkey.

I also don't like the texture. Stick with dark meat pieces and cook them in a sauce rather than dry.

That's the only way I can get it down.

My Indian friends always say when going to incorporate meat from being vegetarian eat very high quality and a little at a time. Like half a serving week one, then full serving week two, etc.

But you know you can get iron from other foods too, right? Peanuts, spinach, etc.

I have been a vegetarian for a long time but recently started trying to eat meat again. (I’m doing it bc my iron is low and I have a chronic illness, and I wonder if adding some meat back into my diet will help anything.) I started with chicken because that’s supposed to be easiest to digest when you haven’t eaten meat in years, but I can’t deal with the texture. I’m thinking maybe I can try some shredded chicken and see if that’s any better. Does anyone have suggestions?
