This next one was recommended to me by another poster here, and it's good.
This last one though is a family recipe and everyone's favourite. It has been described as having a plush, bakery-like texture.
1 c. chopped pecans
1/2 c. cooking oil
1 box yellow cake mix
1/2 c. amber rum
3 packages vanilla instant pudding (small)
1/4 c. butter
1/4 c. water
4 eggs
1/2 c. milk
1 c. sugar
1/2 c rum
Preheat oven to 325 degrees F. Grease and flour a 10 inch tube (angel food) pan. Sprinkle nuts over bottom of pan.
Mix cake with pudding milk, oil, eggs and 1/2 cup rum until smooth. Pour batter over nuts in pan. Bake for 1 hour,
While baking melt butter in a saucepan. Stir in water and sugar, boil 5 minutes, stirring constantly. Remove from heat. Stir in remaining rum.
When cake comes out of oven, poke holes into cake with a skewer.
Pour rum syrup over cake. Let cool. Remove cake from pan.
Serve with whipped cream and fresh fruit of choice.
