I believe Culinaria, the cooking school in Vienna, offers a knife sharpening service.

If you don’t want to buy/store a knife sharpener, the local Ace hardwares will do it in my experience, while you wait. I’m pretty sure they just use the same machine I now have at home. Works fine. A few bucks a blade.

If it’s good enough for ATK it’s good enough for my 25-year old Henckels ProS.

Loaner knives is fantastic. I finally found a local to me sharpener who can do it in an afternoon.

Home knife sharpeners take a lot off your blade. They are also not tailored to your specific knife’s edge. But, sure, that solution can work for some people. I guess I’m a knife snob!

Or you could buy a good knife sharpener and do it yourself. It’s very easy.

I happened across KnifeFlight.com which is a mail-in knife sharpening service. I was so impressed with their service that I wanted to share.

They even send you loaner knives while you wait! It took about two weeks start to finish and the sharpened knives are great.
